Place the blackberries and sugar in alternating layers in a large jar. Seal the jar tightly and refrigerate it for one day. This allows the sugar to draw out the juices from the blackberries and form a syrup. - Add the Spirit:
The next day, pour the tsipouro into the jar, seal it well, and store it in a dimly lit place. Let it infuse for one month. Shake the jar occasionally to help the sugar dissolve completely. - Strain and Store:
After one month, strain the mixture through a muslin cloth or a fine strainer to remove any solids. Pour the resulting liqueur into sterilized glass bottles and seal tightly.
