Ingredients

  • 1 kg tsipouro or vodka
  • 500 g water
  • 10 lemons (peel only, no white pith)
  • 450 g sugar
  • 100 g honey
  • 2 sprigs fresh rosemary

Instructions

  1. Prepare the Lemons:
    Wash the lemons thoroughly. Using a peeler, remove only the thin yellow layer of zest, leaving behind any white pith (this prevents bitterness).
  2. Infuse the Spirit:
    Place the lemon zest in a large glass jar, add the tsipouro (or vodka), seal it tightly, and store in a cool, shaded place for 10 days. During this time, the lemon aroma will infuse into the spirit.
  3. Make the Syrup:
    After 10 days, bring the water, sugar, and rosemary to a gentle boil in a saucepan, stirring until the sugar dissolves. Once the sugar is melted, add the honey, stir well, and remove from heat. Allow the syrup to cool completely.
  4. Combine Mixtures:
    Once the syrup is cool, add it to the jar with the infused spirit and lemon zest. Stir well to combine, then seal the jar again and let it rest in the same spot for an additional 5 days.
  5. Strain and Bottle:
    After 5 more days, strain the liqueur through a fine cloth (without pressing the zest), to ensure your liqueur remains clear and bright. Discard the zest and rosemary. Pour your finished liqueur into sterilized glass bottles.
  6. Rest and Enjoy:
    Let the bottled liqueur sit for about 5 more days to mellow and develop its full flavor. Now it’s ready to enjoy!
