Ingredients

  • 1 kg green apples, peeled and cored
  • 450 g brandy (cognac)
  • 450 g tsipouro (or vodka if unavailable)
  • 400 g sugar
  • 150 g water
  • 2 cinnamon sticks
  • 6 whole cloves

Instructions

  1. Prepare the Apples:
    Wash the apples thoroughly and peel them. Cut each apple into quarters and remove the cores.
  2. Infuse with Spirits and Spices:
    Place the apple pieces into a large, airtight glass jar. Add the brandy, tsipouro, cinnamon sticks, and cloves. Close the jar well and store it in a cool, shaded spot for 1 month, allowing the flavors to mingle and develop.
  3. Strain and Sweeten:
    After a month, open the jar, remove the cinnamon sticks and cloves, and strain the mixture through a muslin cloth or fine sieve, capturing only the fragrant liquid.
  4. Make the Syrup:
    In a small saucepan, heat the water and sugar until the sugar dissolves. Bring it to a gentle boil, stir, then remove from heat and let it cool completely.
  5. Combine and Bottle:
    Add the cooled sugar syrup to the strained apple mixture and stir well. Transfer the finished liqueur into sterilized glass bottles.
  6. Resting Period:
    Let the liqueur rest for an additional 2 weeks before tasting, allowing it to mature and fully harmonize.
