Ingredients

  • 50 loquat pits (from loquats)
  • 5 whole loquats
  • 400 g tsipouro (or a similar grape-based spirit)
  • 150 g sugar
  • 500 g water

Instructions

  1. Prepare the Pits and Fruit:
    Wash the loquat pits and pat them dry with paper towels. Peel the 5 whole loquats and set them aside.
  2. Crush the Pits:
    Using a mortar and pestle, lightly crush the loquat pits—just enough to crack them, not turn them into powder.
  3. First Infusion:
    Place the crushed pits and the peeled loquats into a large glass jar. Add the tsipouro, seal it tightly, and store it in a cool, shaded spot for 6 weeks. Shake the jar every other day to help release the flavors.
  4. Strain the Spirit:
    After 6 weeks, strain the mixture through a muslin cloth or cheesecloth, pressing the solids to extract all the aromatic liquid.
  5. Make the Syrup:
    In a small saucepan, bring the water and sugar to a gentle boil, stirring until the sugar dissolves. Let the syrup cool completely.
  6. Combine and Mature:
    Add the cooled syrup to the flavored tsipouro and stir well. Transfer the mixture into sterilized glass bottles, seal them, and let the liqueur rest in a cool place for an additional 5 weeks.
  7. Enjoy:
    After this final resting period, your loquat pit liqueur is ready to serve and savor.
