Ingredients

  • 20 cherry plums
  • 350 g tsipouro (a Greek grape distillate)
  • 200 g sugar
  • 5 whole cloves

Instructions

  1. Prep the Fruit:
    Wash the cherry plums thoroughly and cut them in half without discarding the pits. Place them into a large, airtight glass jar.
  2. Infuse the Flavors:
    Add the cloves, sugar, and tsipouro to the jar. Seal it tightly and set it in a sunny spot for about 40 days. Shake the jar often to help the sugar dissolve and the flavors meld together.
  3. Strain & Adjust:
    After 40 days, strain the mixture through a muslin cloth (or a fine filter) into a bowl. Give it a taste. If you find it needs a bit more sweetness or a touch more tsipouro, add it now. Then, transfer the liqueur into sterilized glass bottles.
  4. Rest & Enjoy:
    If you add more sugar, shake the bottle to dissolve it completely, and let the liqueur rest for another week before serving.
