Ingredients

  • 10 yellow cherry plums
  • 200 g tsipouro (a Greek grape distillate)
  • 150 g sugar

Instructions

  1. Prepare the Fruit:
    Wash the yellow cherry plums thoroughly and cut them in half, leaving the pits intact. Place them into a large, airtight glass jar.
  2. Steep in the Sun:
    Add the sugar and tsipouro to the jar. Seal it well and set it in a sunny spot for 40 days. Shake the jar often to help the sugar dissolve completely as the flavors infuse.
  3. Strain & Adjust:
    After 40 days, strain the mixture through a muslin cloth (or another fine filter) into a bowl. Taste the liqueur; if you find it needs more sweetness or a touch more tsipouro, adjust accordingly. Transfer it into sterilized glass bottles.
  4. Finishing Touch:
    If you add extra sugar, shake the bottle until fully dissolved and let it rest for another week before serving.
