Ingredients

  • 400 g apricots
  • 300 g sugar
  • 800 g tsipouro or vodka
  • 200 g water

Instructions

  1. Prep the Fruit:
    Wash the apricots thoroughly, remove any pits, and cut them into small pieces.
  2. Infusion:
    Place the apricot pieces and the tsipouro (or vodka) into a large glass jar. Seal it tightly and set it out in the sunlight for 30 days, shaking it frequently so the flavors blend beautifully.
  3. Straining:
    After 30 days, bring the jar indoors and strain the infused spirit through a cheesecloth or fine muslin into a bowl. This step ensures a smooth, clear liqueur.
  4. Sweetening the Mix:
    In a small saucepan, combine the water and sugar. Gently heat until the sugar fully dissolves. Allow this syrup to cool completely before adding it to the bowl of infused liquor.
  5. Bottling:
    Once the syrup and liquor are mixed, pour the liqueur into sterilized glass bottles. Let it rest in a cool, shady spot for another month. This patience allows the flavors to mellow and unite.
