Ingredients
- 500 g filtered watermelon juice
- 250 g sugar
- 800 g rum or cognac
- 1/2 slice of lemon
- 1 sprig of scented geranium (arbaroriza)
Instructions
- Extracting the Juice:
Place a strainer over a large bowl. Add the watermelon pieces into the strainer and squeeze them with your hands to release all the juice. Afterwards, filter the juice thoroughly through a piece of cheesecloth or a clean muslin to ensure it’s perfectly clear. - Infusing the Flavor:
Pour the filtered juice into a saucepan, add the sugar, the half slice of lemon, and the geranium sprig. Bring to a gentle boil over medium heat and let it simmer for 5 minutes. Remove from heat, cover, and let it rest overnight, allowing the flavors to mingle beautifully. - Final Touch:
The next day, add the rum (or cognac) to the infused watermelon syrup. Let it rest for an additional 4 days so the flavors can fully develop and harmonize. - Bottling:
Once the resting period is complete, strain if necessary and pour your watermelon liqueur into sterilized glass bottles.
