Ingredients

  • 500 g watermelon rind (peeled from the red flesh and the outer green skin)
  • 300 g sugar
  • 500 g tsipouro (Greek pomace brandy)
  • 1 cinnamon stick

Instructions

  1. Prepare the Rind:
    Carefully remove all red flesh and the dark green outer skin from the watermelon rind, leaving only the firm, pale part. Cut into pieces and place them in a large, sterilized glass jar.
  2. Add the Goodness:
    Pour in the tsipouro, add the sugar and the cinnamon stick. Seal the jar tightly.
  3. Sunlit Infusion:
    Place the jar in direct sunlight for 30 days. Shake it regularly to help the sugar dissolve and infuse all flavors thoroughly.
  4. Strain & Bottle:
    After 30 days, strain the mixture through a fine cloth or filter to remove any solids. Transfer the finished liqueur into impeccably sterilized bottles.
