Ingredients
- 400 g ripe and firm strawberry tree fruits (koumara)
- 400 g water
- 350 g sugar
- Juice from half a lemon
Instructions
Wash the koumara gently in plenty of water, ensuring they are not damaged. Drain them in a colander.
In a saucepan, combine the water and sugar. Cook over medium heat until the syrup thickens.
Once the syrup is ready, add the koumara and lemon juice. Boil gently for 5–6 minutes, ensuring the fruits do not break down.
Turn off the heat and let the mixture rest for 10 minutes.
To test if the syrup is ready, place a small amount on a plate and let it cool completely. Tilt the plate slightly; if the syrup doesn’t run, it’s ready.
Transfer the preserve to a sterilized glass jar and seal.
