Ingredients

  • 150 g peeled pumpkin
  • 100 g sugar
  • 50 g water
  • 1 cinnamon stick
  • Juice from half a lemon

Instructions

Peel the pumpkin and grate it using a grater.

In a small saucepan, combine the grated pumpkin and water. Bring to a boil and cook for 5–6 minutes.

Using a slotted spoon, remove the boiled pumpkin and place it in a sieve. Reserve the liquid.

Press the boiled pumpkin with a spoon against the sieve to extract its pulp. As you press, the pulp will stick to the outside of the sieve—scrape it off with the spoon and repeat until you’ve collected all the pulp.

Mix the pumpkin pulp back into the reserved liquid. Add the sugar, cinnamon stick, and lemon juice. Simmer everything together for 10–15 minutes.

Once the syrup is ready, remove the cinnamon stick and let it cool. If you’re working with larger quantities, you may need to extend the cooking time slightly.

The syrup should remain fluid, perfect for drizzling over doughnuts, ice cream, or your favorite desserts.
