Ingredients

  • 300 g tamarillo fruit
  • 200 g sugar
  • 50 g water
  • Juice from half a lemon

Instructions

Bring a pot of water to a boil. Once boiling, add the tamarillos and blanch them for 2 minutes.

Using a slotted spoon, remove the tamarillos and place them in a bowl of cold water.

Peel the tamarillos by trimming the tip of each fruit with a sharp knife and removing the skin.

Cut the peeled tamarillos in half, discard the seeds, and transfer the flesh to a bowl with the water. Blend the mixture using an immersion blender or a standard blender until smooth.

Strain the blended mixture through a sieve to remove any remaining bits or pulp.

Pour the strained mixture into a saucepan, add the lemon juice and sugar, and simmer over medium heat for 10–15 minutes until the syrup thickens slightly.

The syrup should remain fluid, perfect for drizzling over ice cream, desserts, doughnuts, or any dish that calls for a touch of sweetness.
