Ingredients

  • 400 g peeled rambutans
  • 300 g sugar
  • 50 g water
  • Juice from half a lemon

Instructions

Peel the rambutans, removing the hard outer shell. Carefully separate the flesh from the seeds.

Blend the fruit flesh in a blender until smooth.

Place a sieve over a saucepan and pour the blended mixture into it. Use a spoon to press the pulp through the sieve, extracting as much of the fruit as possible for the syrup.

Add the water, sugar, and lemon juice to the saucepan.

Cook over medium heat for about 15 minutes, or until the syrup thickens slightly. The syrup should remain fluid, not too thick, so it can be drizzled easily.
