Ingredients
- 300 g blueberries
- 250 g sugar
- 200 g water
- Juice from ½ a lemon

- Initial Boil
Rinse the blueberries thoroughly and place them in a saucepan. Add the water and sugar, then bring to a boil. Simmer for about 10 minutes to soften the fruit. - Blend the Fruit
Using a slotted spoon, remove the blueberries and place them in a blender. Puree until smooth. Keep the cooking liquid in the saucepan. - Strain the Mixture
Set a fine sieve over the saucepan containing the reserved liquid. Pour the blended fruit through the sieve and press with a spoon to extract as much pulp as possible. Don’t forget to scrape any pulp clinging to the outside of the sieve back into the saucepan. - Add Lemon and Finish
Add the lemon juice to the saucepan. (If the recipe mentions sugar again, simply ensure you have a total of 250 g of sugar used from the start.) Boil the mixture for about 15 minutes until the syrup thickens slightly. It should remain fluid and easily pourable.
Note: The syrup should not be overly thick—just smooth and pourable, perfect for drizzling over ice cream, doughnuts, pancakes, or anything else that could use a fruity, sweet touch.
