Ingredients

  • 300 g blueberries
  • 250 g sugar
  • 200 g water
  • Juice from ½ a lemon

Instructions

  1. Initial Boil
    Rinse the blueberries thoroughly and place them in a saucepan. Add the water and sugar, then bring to a boil. Simmer for about 10 minutes to soften the fruit.
  2. Blend the Fruit
    Using a slotted spoon, remove the blueberries and place them in a blender. Puree until smooth. Keep the cooking liquid in the saucepan.
  3. Strain the Mixture
    Set a fine sieve over the saucepan containing the reserved liquid. Pour the blended fruit through the sieve and press with a spoon to extract as much pulp as possible. Don’t forget to scrape any pulp clinging to the outside of the sieve back into the saucepan.
  4. Add Lemon and Finish
    Add the lemon juice to the saucepan. (If the recipe mentions sugar again, simply ensure you have a total of 250 g of sugar used from the start.) Boil the mixture for about 15 minutes until the syrup thickens slightly. It should remain fluid and easily pourable.

Note: The syrup should not be overly thick—just smooth and pourable, perfect for drizzling over ice cream, doughnuts, pancakes, or anything else that could use a fruity, sweet touch.
