Ingredients
- 350 g mango
- 300 g sugar
- 200 g water
- 1 cinnamon stick
- Juice of ½ a lemon
Instructions
- Prepare the Mango
Wash the mango thoroughly, peel it, and remove the pit.
Cut the flesh into small pieces and place them in a saucepan. - First Boil
Add the water to the saucepan and boil for about 15 minutes until the fruit softens. - Blend the Fruit
Use a slotted spoon to remove the softened fruit and transfer it to a blender. Keep the cooking liquid in the saucepan.
Blend the fruit until smooth. - Strain the Mixture
Place a fine mesh sieve over the saucepan with the reserved liquid. Pour the blended fruit through the sieve. Press with a spoon to extract as much pulp as possible. Scrape any pulp clinging to the outside of the sieve back into the saucepan. - Second Boil
Add the sugar, lemon juice, and cinnamon stick. Bring it back to a gentle boil for another 8-10 minutes until the syrup thickens slightly. It should remain pourable and not overly thick.
