Ingredients

  • 300 g avocado
  • 250 g sugar
  • 150 g water
  • 1 cinnamon stick

Instructions

  1. Prepare the Avocado
    Peel the avocados and remove the pits. Cut the flesh into small pieces and place them in a saucepan.
  2. First Boil
    Add the sugar, water, and cinnamon stick to the saucepan. Bring to a boil and let it simmer for about 10 minutes to soften the fruit.
  3. Blend and Strain
    Use a slotted spoon to remove the avocado pieces, transferring them to a blender. Puree until smooth, keeping the cooking liquid in the saucepan.
    Place a fine mesh sieve over the saucepan and pour the blended avocado through it, pressing with a spoon to extract as much pulp as possible. Scrape any pulp clinging to the outside of the sieve back into the saucepan.
  4. Second Boil
    Return the saucepan to medium heat and boil for another 6-7 minutes until the syrup thickens slightly. The syrup should remain pourable, not overly thick.
