- 300 g avocado
- 250 g sugar
- 150 g water
- 1 cinnamon stick
Instructions
- Prepare the Avocado
Peel the avocados and remove the pits. Cut the flesh into small pieces and place them in a saucepan. - First Boil
Add the sugar, water, and cinnamon stick to the saucepan. Bring to a boil and let it simmer for about 10 minutes to soften the fruit. - Blend and Strain
Use a slotted spoon to remove the avocado pieces, transferring them to a blender. Puree until smooth, keeping the cooking liquid in the saucepan.
Place a fine mesh sieve over the saucepan and pour the blended avocado through it, pressing with a spoon to extract as much pulp as possible. Scrape any pulp clinging to the outside of the sieve back into the saucepan. - Second Boil
Return the saucepan to medium heat and boil for another 6-7 minutes until the syrup thickens slightly. The syrup should remain pourable, not overly thick.
