Ingredients
- 400 g lychees (pitted)
- 300 g sugar
- 100 g water
- Juice of ½ a lemon

- Prepare the Lychees
Remove the tough outer skin and the pits from the lychees. Place the cleaned fruit in a blender and puree until smooth. - First Boil
In a saucepan, combine the pureed lychees and the water. Bring to a boil and simmer for 10-15 minutes. - Strain the Mixture
Using a slotted spoon, remove the cooked fruit and place it in a fine mesh strainer positioned over the saucepan. Press the fruit with a spoon to extract as much pulp and juice as possible. Any pulp that sticks to the outside of the strainer should be scraped back into the saucepan. - Add Sugar and Lemon
Add the sugar and lemon juice to the saucepan. Return to the heat and simmer for another 5-7 minutes until the syrup thickens slightly. The syrup should remain fluid and easy to pour.
