Ingredients

  • 500 g prickly pear juice
  • 400 g sugar
  • 50 g water
  • Juice of 1 lemon

Instructions

  1. Prepare the Prickly Pears
    Carefully peel the prickly pears, removing all spines and skin. Chop them into small pieces and place them in a bowl.
  2. Extract the Juice
    Add the water to the bowl and blend the mixture using an immersion blender or a standard blender. Strain the juice through a fine mesh sieve to separate the pulp from the seeds. Discard the seeds and keep only the smooth juice.
  3. Make the Syrup
    Pour the extracted juice into a saucepan. Add the sugar and lemon juice, then cook over medium heat for 10-15 minutes until the syrup thickens and flows smoothly.
  4. Usage
    Use this fragrant syrup as a topping for toast, yogurt, ice cream, or any dish that calls for a sweet drizzle.
