Ingredients
- 300 g persimmons (peeled)
- 200 g sugar
- 70 g water
- 1 star anise
- 1 tablespoon lemon juice
Instructions
- Prepare the Persimmons
Peel the persimmons and cut them into pieces. Place the fruit and the water into a blender and puree until very smooth. - Strain the Mixture
Set a fine mesh sieve over a saucepan. Pour the blended mixture through the sieve, pressing with a spoon to extract as much pulp as possible. Scrape off any pulp clinging to the outside of the sieve and return it to the saucepan. - Cook the Syrup
Add the sugar, star anise, and lemon juice to the saucepan. Bring the mixture to a gentle boil and simmer for about 10-15 minutes until the syrup thickens slightly. It should remain pourable and not overly thick.
Note: This syrup should have a fluid consistency, perfect for drizzling over ice cream, doughnuts, pancakes, or any treat that could use a delicate, fruity sweetness.
