Ingredients

  • 300 g persimmons (peeled)
  • 200 g sugar
  • 70 g water
  • 1 star anise
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Persimmons
    Peel the persimmons and cut them into pieces. Place the fruit and the water into a blender and puree until very smooth.
  2. Strain the Mixture
    Set a fine mesh sieve over a saucepan. Pour the blended mixture through the sieve, pressing with a spoon to extract as much pulp as possible. Scrape off any pulp clinging to the outside of the sieve and return it to the saucepan.
  3. Cook the Syrup
    Add the sugar, star anise, and lemon juice to the saucepan. Bring the mixture to a gentle boil and simmer for about 10-15 minutes until the syrup thickens slightly. It should remain pourable and not overly thick.

Note: This syrup should have a fluid consistency, perfect for drizzling over ice cream, doughnuts, pancakes, or any treat that could use a delicate, fruity sweetness.
