Ingredients
- 300 g red raspberries
- 250 g sugar
- 200 g water
- Juice from half a lemon
Instructions
Rinse the raspberries thoroughly and place them in a saucepan with the water. Boil over medium heat for about 10 minutes until they soften.
Using a slotted spoon, remove the raspberries and transfer them to a fine sieve. Keep the remaining liquid in the saucepan.
Set the sieve over the saucepan and press the raspberries with a spoon to extract all their pulp for the syrup. Some pulp may stick to the outside of the sieve; scrape it off and add it back into the saucepan.
Once all the pulp has been extracted, add the sugar and lemon juice to the saucepan. Boil everything together for about 15 minutes until the syrup thickens slightly. The syrup should remain somewhat fluid, not too thick, so it’s perfect for drizzling over ice cream or any dessert you enjoy with syrup.
