Ingredients
- 400 g blackberries
- 350 g sugar
- 200 g water
- Juice from half a lemon
Instructions
Wash the blackberries thoroughly and place them in a saucepan with the water.
Boil over medium heat for 10 minutes, until the blackberries soften.
Using a slotted spoon, remove the blackberries and transfer them to a blender. Reserve the juice in the saucepan.
Blend the blackberries until smooth. Place a fine sieve over the saucepan with the reserved juice and pour the blended mixture into the sieve.
Press the blackberry puree through the sieve with a spoon to extract all the pulp. Any pulp that sticks to the outside of the sieve can be scraped off and added to the saucepan.
Once all the pulp is extracted, add the sugar and lemon juice to the saucepan.
Simmer the mixture for 15–20 minutes, or until the syrup thickens slightly. The syrup should remain slightly fluid and not too thick.
Serve over ice cream, pancakes, or any dessert of your choice.
