Ingredients
- 300 g papaya (peeled and seeded)
- 250 g sugar
- 150 g water
- Juice of ½ a lemon
- 1 cinnamon stick

- Prepare the Papaya
Peel the papaya, remove the seeds, and cut it into small pieces. Place the pieces in a blender and puree until smooth. - First Boil
In a saucepan, combine the papaya puree, sugar, water, cinnamon stick, and lemon juice. Bring to a gentle boil and simmer for about 10 minutes to allow the flavors to mingle and the mixture to soften. - Strain the Mixture
Set a fine mesh sieve over another saucepan. Pour the hot mixture through the sieve, pressing with a spoon to extract as much pulp as possible. Scrape any pulp that clings to the outside of the sieve back into the saucepan. - Second Boil
Return the strained mixture to the heat and simmer for another 6-7 minutes until the syrup thickens slightly. It should remain pourable and not overly thick.
Note: This syrup should be fluid, perfect for drizzling over ice cream, pancakes, or anything else that calls for a sweet, tropical touch.
