Ingredients

  • 300 g papaya (peeled and seeded)
  • 250 g sugar
  • 150 g water
  • Juice of ½ a lemon
  • 1 cinnamon stick

Instructions

  1. Prepare the Papaya
    Peel the papaya, remove the seeds, and cut it into small pieces. Place the pieces in a blender and puree until smooth.
  2. First Boil
    In a saucepan, combine the papaya puree, sugar, water, cinnamon stick, and lemon juice. Bring to a gentle boil and simmer for about 10 minutes to allow the flavors to mingle and the mixture to soften.
  3. Strain the Mixture
    Set a fine mesh sieve over another saucepan. Pour the hot mixture through the sieve, pressing with a spoon to extract as much pulp as possible. Scrape any pulp that clings to the outside of the sieve back into the saucepan.
  4. Second Boil
    Return the strained mixture to the heat and simmer for another 6-7 minutes until the syrup thickens slightly. It should remain pourable and not overly thick.

Note: This syrup should be fluid, perfect for drizzling over ice cream, pancakes, or anything else that calls for a sweet, tropical touch.
