Ingredients

  • 200 g rose petals
  • 250 g water
  • 250 g sugar
  • Juice of ½ a lemon

Instructions

  1. Prepare the Rose Petals
    Thoroughly wash the roses. Using scissors, trim the petals away from their stems, leaving the white tips on the stems behind and discarding the stems.
  2. Soften the Petals
    In a saucepan, combine the rose petals with the water. Bring to a boil and simmer for about 10 minutes until the petals soften.
  3. Blend and Strain
    Using a slotted spoon, remove the petals and place them in a blender. Blend thoroughly.
    Keep the juice remaining in the saucepan. Set a fine-mesh sieve over the saucepan and pour in the blended petals. Press with a spoon to extract as much pulp and flavor as possible. Scrape any pulp sticking to the outside of the sieve back into the saucepan.
  4. Add Sugar and Lemon
    Stir in the sugar and lemon juice. Bring the mixture to a gentle boil over medium heat and simmer for around 15 minutes until the syrup thickens slightly. It should remain fluid enough to drizzle easily.
