- 300 g strawberry tree fruits (koumara)
- 200 g sugar
- 50 g water
- 1 tablespoon lemon juice
Instructions
In a small saucepan, combine the water and sugar, and heat over medium heat until the sugar dissolves completely.
Add the koumara to the saucepan and boil together for 2 minutes.
Using a slotted spoon, remove the koumara and place them in a fine-mesh sieve. Press the fruits with a spoon to separate the pulp from the seeds, collecting the pulp in a bowl.
Return the extracted pulp to the saucepan with the syrup, stir well, and simmer for an additional 5–10 minutes until the syrup thickens slightly.
If using larger quantities of ingredients, allow for a slightly longer cooking time.
The syrup should remain fluid, making it perfect for drizzling over pancakes, ice cream, or any dish where you’d like to add a natural, fruity sweetness.
