Ingredients
- 300 g starfruit (carambola)
- 100 g water
- 200 g sugar
- Juice from half a lemon
Instructions
Wash the starfruits thoroughly. Use a knife to trim the edges along the ridges of the fruit.
Slice the starfruit into pieces and remove any seeds.
Place the starfruit pieces and water into a saucepan and simmer for 15 minutes.
Using a slotted spoon, remove the cooked starfruit pieces and place them in a fine sieve. Reserve the liquid in the saucepan.
Position the sieve over the saucepan and press the starfruit with a spoon to extract the pulp. As you press, the pulp will stick to the outside of the sieve. Scrape it off with the spoon and return it to the saucepan.
Add the sugar and lemon juice to the saucepan and simmer for another 15 minutes, or until the syrup thickens slightly.
The syrup should remain fluid, making it ideal for drizzling over ice cream, pancakes, doughnuts, or any dessert that calls for syrup.
