Ingredients

  • 400 g Cape gooseberries
  • 300 g sugar
  • 80 g water
  • Juice from half a lemon

Instructions

Remove the dry husks from the Cape gooseberries, trim the small stems carefully, and wash the fruits thoroughly.

In a small saucepan, combine the gooseberries and water. Bring to a boil and simmer for 5–6 minutes.

Using a slotted spoon, remove the boiled gooseberries and place them in a fine-mesh sieve.

Position the sieve over the saucepan with the reserved cooking liquid and press the fruits with a spoon to extract their pulp.

As you press, the fruit pulp may stick to the outside of the sieve. Scrape it off with the spoon and add it back into the saucepan with the liquid.

Once all the pulp is extracted, add the sugar to the saucepan and continue simmering for 10–15 minutes, or until the syrup slightly thickens. Adjust the cooking time depending on the quantity of ingredients.

The syrup should remain fluid, making it ideal for drizzling over ice cream, pancakes, doughnuts, or any dish that pairs well with syrup.
