Ingredients

  • 3 ripe American persimmons (Diospyros virginiana)
  • 300 g tsipouro, raki, or vodka
  • 1 star anise
  • 150 g sugar
  • 100 g water

Instructions

  1. Prep the Persimmons:
    Wash the persimmons thoroughly and peel them. Cut the fruit into small pieces and place them—along with the seeds—into a glass jar.
  2. Infuse the Spirits:
    Pour in the tsipouro (or vodka) and add the star anise. Seal the jar tightly and store it in a cool, shaded place for 1 week, allowing the flavors to meld.
  3. Make the Syrup:
    After 1 week, bring the water and sugar to a brief boil—just enough to dissolve the sugar—about 3 minutes. Remove from heat and let the syrup cool completely.
  4. Combine:
    Once cooled, pour the syrup into the jar with the persimmons and infused spirit. Stir gently, seal again, and let it rest for another 24 hours.
  5. Strain and Bottle:
    After 24 hours, strain the liqueur through a fine cloth (cheesecloth or a similar material) without pressing too hard, to keep it clear and bright. Discard the solids. Transfer the finished liqueur into sterilized glass bottles.
