- 10 nectarines (almost ripe, not mushy)
- 800 g water
- 400 g sugar
- 1 cinnamon stick

- Prepare the Nectarines
Wash the nectarines thoroughly, peel them, cut them in half, and remove the pits. - Make the Syrup
In a saucepan, combine the water and sugar. Place it over low heat and stir until the sugar dissolves. Before the syrup begins to boil, add the nectarines and the cinnamon stick. - Cook the Compote
Simmer over medium heat for 10-15 minutes, just until the nectarines soften. - Cool and Store
Once the nectarines have softened, transfer them to a bowl and let them cool. Refrigerate to enjoy them chilled. - For Long-Term Storage
- Transfer the nectarines and syrup to sterilized jars and seal tightly.
- Place a clean towel in the bottom of a pot and arrange the jars upside down. Cover with water and boil for 15-20 minutes.
- Remove the jars, allow them to cool slightly, and tighten the lids. Store in a cool place or in the refrigerator.
