Ingredients

  • 10 nectarines (almost ripe, not mushy)
  • 800 g water
  • 400 g sugar
  • 1 cinnamon stick

Instructions

  1. Prepare the Nectarines
    Wash the nectarines thoroughly, peel them, cut them in half, and remove the pits.
  2. Make the Syrup
    In a saucepan, combine the water and sugar. Place it over low heat and stir until the sugar dissolves. Before the syrup begins to boil, add the nectarines and the cinnamon stick.
  3. Cook the Compote
    Simmer over medium heat for 10-15 minutes, just until the nectarines soften.
  4. Cool and Store
    Once the nectarines have softened, transfer them to a bowl and let them cool. Refrigerate to enjoy them chilled.
  5. For Long-Term Storage
    • Transfer the nectarines and syrup to sterilized jars and seal tightly.
    • Place a clean towel in the bottom of a pot and arrange the jars upside down. Cover with water and boil for 15-20 minutes.
    • Remove the jars, allow them to cool slightly, and tighten the lids. Store in a cool place or in the refrigerator.
