Ingredients

  • 400g black giant beans
  • 3 ripe tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon tomato paste, diluted with a little water
  • 1 carrot, sliced
  • 2 celery stalks, chopped (without leaves)
  • A sprig of rosemary
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. Thoroughly rinse the giant beans and soak them in plenty of water for at least 10-12 hours.
  2. Once ready, boil them over medium heat for about an hour until they soften and have the desired amount of broth, or cook them in a pressure cooker.
  3. In a separate pot, heat the olive oil and sauté the onion and garlic until fragrant.
  4. Add the tomatoes, tomato paste, carrot, celery, rosemary, salt, pepper, and paprika. Simmer everything together for 3-4 minutes.
  5. Once the beans are cooked, add them to the sauce in the pot. Simmer for 20-25 minutes until the flavors meld together and the sauce thickens.

This dish brings together the earthy flavor of black giant beans with a rich and aromatic tomato-based sauce. Perfectly comforting and hearty, it’s ideal for a wholesome family meal. Serve with crusty bread or rice, and enjoy a taste of Mediterranean goodness at its best!
