Ingredients
- 400g black giant beans
- 3 ripe tomatoes, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 tablespoon tomato paste, diluted with a little water
- 1 carrot, sliced
- 2 celery stalks, chopped (without leaves)
- A sprig of rosemary
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- Thoroughly rinse the giant beans and soak them in plenty of water for at least 10-12 hours.
- Once ready, boil them over medium heat for about an hour until they soften and have the desired amount of broth, or cook them in a pressure cooker.
- In a separate pot, heat the olive oil and sauté the onion and garlic until fragrant.
- Add the tomatoes, tomato paste, carrot, celery, rosemary, salt, pepper, and paprika. Simmer everything together for 3-4 minutes.
- Once the beans are cooked, add them to the sauce in the pot. Simmer for 20-25 minutes until the flavors meld together and the sauce thickens.
