Ingredients
- 1 kg yellow pumpkin, grated
- 1 onion, grated
- 2 garlic cloves, minced
- 2 eggs
- 2 tablespoons fresh mint, finely chopped (or dried)
- 2 tablespoons dill, finely chopped
- 150g all-purpose flour
- Salt
- Pepper
- Olive oil for frying
Instructions
- Cut the pumpkin and remove the soft center with the seeds.
- Grate the pumpkin into a large bowl, sprinkle with a little salt, mix, and let it sit for 10 minutes.
- Squeeze the grated pumpkin with your hands to remove excess moisture, then place it into a clean bowl.
- Add the eggs, mint, dill, onion, garlic, salt, pepper, and flour to the bowl. Mix well until all ingredients are combined. Let the mixture rest for 10 minutes.
- Heat olive oil in a frying pan over medium heat. Using a tablespoon, scoop equal portions of the mixture and place them into the pan.
- Space the fritters apart in the pan, flatten them slightly with the back of the spoon, and fry them on both sides until golden brown.
- Remove the fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.
