Ingredients for the Filling

  • 1 kg yellow pumpkin, grated
  • 1 onion, grated
  • 2 garlic cloves, minced
  • 2 eggs
  • 2 tablespoons fresh mint, finely chopped (or dried)
  • 2 tablespoons dill, finely chopped
  • 150 g all-purpose flour or 150 g crushed vermicelli noodles
  • Salt
  • Pepper
  • Olive oil for frying

Instructions for the Filling

  1. Cut and clean the pumpkin, removing the soft interior with the seeds.
  2. Grate the pumpkin into a bowl, sprinkle with a little salt, and let it sit for 10 minutes.
  3. Squeeze the grated pumpkin with your hands to remove excess moisture and transfer it to a clean bowl.
  4. Add the eggs, mint, dill, onion, garlic, salt, pepper, and either flour or crushed vermicelli.
  5. Mix all the ingredients together until combined, then let the mixture rest for 10 minutes.

  • 1 kg all-purpose flour
  • 300 g olive oil
  • Salt
  • 200 g water

Instructions for the Dough

  1. In a bowl, combine the flour, olive oil, and salt.
  2. Gradually add the water while kneading until a firm dough forms.
  3. Divide the dough into small balls, place them on a tray, and let them rest for about an hour.
  4. Roll each dough ball into a small circle using a rolling pin.

Assembly and Cooking

  1. Place a spoonful of the pumpkin mixture in the center of each dough circle.
  2. Fold one half of the dough over the filling to create a half-moon shape. Seal the edges by pressing them with a fork to prevent them from opening during cooking.
  3. For baking: Preheat the oven to 180-190°C (356-374°F) and bake until golden brown on both sides.
  4. For frying: Heat 3 tablespoons of olive oil in a pan over medium-low heat and fry the pies until golden on both sides.
