Ingredients

  • 300g chickpeas
  • 2 red peppers, chopped into pieces
  • 2 onions, finely chopped
  • 200g mushrooms, sliced
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Soak the Chickpeas
    Place the chickpeas in a bowl with cold water the night before. Let them soak overnight.
  2. Cook the Chickpeas
    The next day, boil the chickpeas until tender. Drain them, transfer them to a bowl, and let them cool.
  3. Sauté the Vegetables
    Heat some olive oil in a pan and sauté the onions and red peppers. Add the mushrooms and continue sautéing for another 2-3 minutes.
  4. Combine Ingredients
    Add the sautéed vegetables to the bowl with the chickpeas. Season with salt and pepper, drizzle with olive oil, and mix well to combine all the ingredients.
