Ingredients

  • 250g lentils
  • 1 can of tuna in water
  • 2 bay leaves
  • 1 carrot
  • 1/2 bunch of parsley, finely chopped
  • 2 spring onions, finely chopped
  • 2 tablespoons pitted olives
  • 10 cherry tomatoes or 1 tomato, chopped
  • 1 small cucumber, sliced into rounds
  • Salt
  • Pepper
  • 4-5 tablespoons olive oil

Instructions

  1. Wash the lentils and boil them with the bay leaves and salt until they are al dente. Drain them and place them in a bowl. Ensure they don’t overcook to maintain their shape when mixed.
  2. Drain the tuna and add it to the bowl with the lentils.
  3. Finely chop the parsley, spring onions, and other ingredients, and add them to the bowl.
  4. Add the olives and olive oil, then gently mix everything together.
  5. Taste and adjust salt if necessary. Serve fresh and enjoy!
