Sweet Oatmeal Cookies with Honey & Figs
Oats and chopped dried figs blended with honey, brown sugar & butter, spiced with vanilla and cinnamon—cookies fragrant, chewy & naturally sweet.
Ingredients
- 120g oats
- 100g all-purpose flour
- 100g melted butter
- 6 tablespoons honey
- 50g brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 pinch of salt
- 6 tablespoons milk
- 6 dried figs, finely chopped
Instructions
- Prepare the Baking Tray: Line a baking tray with parchment paper and set it aside.
- Combine Dry Ingredients: In a mixing bowl, add the oats, flour, baking powder, cinnamon, salt, brown sugar, vanilla, and chopped figs. Mix well to combine.
- Incorporate Wet Ingredients: Make a small well in the center of the dry mixture. Add the honey, milk, and melted butter. Stir until a slightly sticky dough forms.
- Form the Cookies: Fill a glass with water. Using two spoons dipped in water, scoop some dough with one spoon and use the other spoon to drop it onto the prepared baking tray. Form small balls about the size of a walnut. Repeat until all the dough is used.
- Flatten the Cookies: Gently press down on each ball with the back of a spoon to flatten slightly.
- Bake: Preheat the oven to 180-190°C (356-374°F). Bake the cookies for 10-12 minutes or until golden brown, keeping an eye on them as baking times may vary.
- Cool and Serve: Remove from the oven and let the cookies cool on the tray for a few minutes before transferring them to a wire rack.
