Ingredients

  • 250g lentils
  • 1 red bell pepper
  • 5-6 pickled cucumbers
  • 5-6 pickled carrots
  • 2 spring onions, finely chopped
  • Capers
  • 1/2 bunch parsley, finely chopped
  • 2 bay leaves
  • 3 garlic cloves
  • Salt

For the Dressing

  • 5 tablespoons olive oil
  • 3 tablespoons vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon mustard
  • Salt
  • Pepper

Instructions for the Lentils

  1. Wash the lentils thoroughly and boil them with salt, garlic, and bay leaves.
  2. Once cooked al dente, drain the lentils and transfer them to a bowl. They should remain firm to avoid breaking apart during mixing.
