Ingredients

  • 400 g mung beans
  • 4 ripe tomatoes, finely chopped
  • 2-3 onions, sliced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, quartered
  • 2 celery stalks, chopped
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Prepare the Vegetables:
    Clean and wash all the vegetables thoroughly. Slice the carrots, celery, and onions, and cut the potatoes into quarters.
  2. Sauté the Vegetables:
    Heat olive oil in a pot over medium heat. Add the prepared vegetables and sauté for 2 minutes.
  3. Add the Mung Beans and Tomatoes:
    Stir in the mung beans, chopped tomatoes, minced garlic, salt, and pepper. Add 1 liter of water to the pot.
  4. Cook the Dish:
    Mix everything well, cover the pot with a lid, and let it simmer on low heat for approximately 1 hour.
    Check occasionally, and if more water is needed, add hot water to maintain the consistency.
  5. Serve:
    Once the mung beans and potatoes are tender, remove from heat. Serve warm with a drizzle of olive oil for added flavor.
