
Ingredients
- 250 g Carolina rice
- 650 g water (add more if needed)
- 150 g butter
- 2 tablespoons sugar (adjust to taste)
- 1 tablespoon sugar (for the vermicelli)
- 4 nests of vermicelli
- 2 tablespoons raisins
- Salt
- Orange zest
Instructions
- In a pot, add the water and salt, and bring to a boil.
- Once the water is boiling, add the rice and cook over medium heat for 10 minutes.
- Stir in the sugar and continue cooking until the rice becomes creamy and thickened.
- Meanwhile, in a pan, melt the butter over medium heat. Once it’s hot, add the vermicelli and 1 tablespoon of sugar.
- Stir continuously until the vermicelli turns a golden brown.
- Just before removing the rice from the heat, add the toasted vermicelli, raisins, and orange zest. Stir well to combine.
- Cover the pot with a clean kitchen towel and place the lid on top. Let it rest undisturbed for about 1 hour to allow the flavors to meld together.

Serve warm as a unique side dish or as a sweet treat, garnished with extra orange zest for a burst of freshness.
