Ingredients

  • 400 g cooked white beans
  • 100 g bean broth (from the cooked beans)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • Juice of half a lemon
  • Salt
  • Pepper
  • 4 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a pan and lightly sauté the onion and garlic. Set aside.
  2. In a bowl, combine the cooked beans, salt, pepper, lemon juice, remaining olive oil, and the sautéed onion and garlic.
  3. Use an immersion blender or a regular blender to purée the mixture until smooth.
  4. If the purée is too thick, gradually add some of the reserved bean broth until you reach the desired consistency.

Serving Suggestion
Serve warm or at room temperature as a side dish or a dip, drizzled with a little extra olive oil on top.
