Ingredients

  • 200 g Carolina rice
  • 550 g water (add more if needed)
  • 100 g butter
  • 3 nests of vermicelli
  • 1 tablespoon raisins
  • Salt
  • Orange zest

Instructions

  1. In a pot, add the water and salt, and bring to a gentle boil over medium heat.
  2. Add the rice and cook, stirring continuously to prevent sticking, until the mixture becomes creamy and thickened.
  3. Meanwhile, melt the butter in a pan over medium heat. Once it’s hot, add the vermicelli and a pinch of salt.
  4. Stir constantly until the vermicelli turns a golden brown color.
  5. Just before removing the rice from the heat, add the toasted vermicelli, raisins, and orange zest. Mix well to combine.
  6. Remove the pot from the heat, cover it with a clean kitchen towel and the lid, and let it rest for about 1 hour. This allows the flavors to meld and the ingredients to set.
