Ingredients
- 500 g dried broad beans
- 2 onions, sliced
- 4 ripe tomatoes, finely chopped
- 1 bunch fresh parsley, finely chopped
- 100 g water
- Salt
- Pepper
- Sweet paprika
- Olive oil
Instructions
- Soak the dried broad beans in plenty of water for at least 10-12 hours.
- Once soaked, use a knife to remove the black spot from each bean.
- Heat olive oil in a large pot over medium heat and sauté the onions until softened.
- Add the soaked broad beans, chopped tomatoes, salt, pepper, paprika, and water to the pot.
- Cover the pot and simmer gently for about 30-35 minutes, stirring occasionally, until the beans are tender and the sauce has thickened.
- If needed, add a little more water during cooking to prevent sticking.
