Ingredients

  • 500 g dried broad beans
  • 2 onions, sliced
  • 4 ripe tomatoes, finely chopped
  • 1 bunch fresh parsley, finely chopped
  • 100 g water
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. Soak the dried broad beans in plenty of water for at least 10-12 hours.
  2. Once soaked, use a knife to remove the black spot from each bean.
  3. Heat olive oil in a large pot over medium heat and sauté the onions until softened.
  4. Add the soaked broad beans, chopped tomatoes, salt, pepper, paprika, and water to the pot.
  5. Cover the pot and simmer gently for about 30-35 minutes, stirring occasionally, until the beans are tender and the sauce has thickened.
  6. If needed, add a little more water during cooking to prevent sticking.

Serving Suggestion
Serve these delicious braised broad beans warm, with crusty bread on the side to soak up the flavorful sauce. A sprinkle of fresh parsley before serving adds a refreshing touch.
