Ingredients
- 250 g chickpeas, soaked overnight
- 150 g crumbled feta cheese
- 1 onion, finely chopped
- 2 spring onions, finely chopped
- 3 garlic cloves, finely chopped
- 1/2 bunch fresh parsley, finely chopped
- 1/2 bunch fresh dill, finely chopped
- 6-7 tbsp all-purpose flour
- Salt
- Pepper
- Paprika
- Olive oil for frying
Instructions
- Place the soaked chickpeas in a pot with water and let them soak overnight.
- In the morning, drain the chickpeas, keeping one glass of the soaking water in case it’s needed for mixing later. Blend the chickpeas in a food processor until smooth and transfer them to a mixing bowl.
- Add the chopped onion, spring onions, garlic, parsley, dill, salt, pepper, paprika, and flour to the bowl. Mix thoroughly until all the ingredients are well combined.
- Fold in the crumbled feta cheese and give the mixture one final gentle stir. Let the mixture rest for about 30 minutes to allow the flavors to meld together.
- Shape the mixture into patties and place them on a tray.
- Heat olive oil in a frying pan over medium heat. Once the oil is hot, fry the patties on both sides until golden brown and crispy.
