Ingredients

  • 250 g chickpeas, soaked overnight
  • 150 g crumbled feta cheese
  • 1 onion, finely chopped
  • 2 spring onions, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/2 bunch fresh parsley, finely chopped
  • 1/2 bunch fresh dill, finely chopped
  • 6-7 tbsp all-purpose flour
  • Salt
  • Pepper
  • Paprika
  • Olive oil for frying

Instructions

  1. Place the soaked chickpeas in a pot with water and let them soak overnight.
  2. In the morning, drain the chickpeas, keeping one glass of the soaking water in case it’s needed for mixing later. Blend the chickpeas in a food processor until smooth and transfer them to a mixing bowl.
  3. Add the chopped onion, spring onions, garlic, parsley, dill, salt, pepper, paprika, and flour to the bowl. Mix thoroughly until all the ingredients are well combined.
  4. Fold in the crumbled feta cheese and give the mixture one final gentle stir. Let the mixture rest for about 30 minutes to allow the flavors to meld together.
  5. Shape the mixture into patties and place them on a tray.
  6. Heat olive oil in a frying pan over medium heat. Once the oil is hot, fry the patties on both sides until golden brown and crispy.
