Ingredients
- 400g dried broad beans
- 1 onion, finely chopped
- 6 tablespoons olive oil
- Salt
- Pepper
- Juice of half a lemon
Instructions
- Soak the Beans
The night before, place the broad beans in a bowl of plenty of water and let them soak overnight. - Boil the Beans
In the morning, change the water, add salt, and boil the beans for 20-25 minutes. Once cooked, drain them, peel off their skins, and place them in a pot with the chopped onion. - Cook the Fava
Add just enough water to cover the beans, and season with a bit more salt if needed. Cook over medium heat, stirring constantly to prevent sticking, until the water is absorbed, and the beans begin to break down. - Add Lemon Juice
Lower the heat slightly and stir in the lemon juice while continuing to mix. If the mixture seems too thick, gradually add lukewarm water as needed to achieve a smooth consistency. - Finish the Fava
Once the fava reaches the desired texture, add pepper and remove it from the heat. For an extra creamy consistency, use an immersion blender to puree the mixture. - Serve
Serve warm, drizzled with fresh lemon juice and a splash of raw olive oil.
