Ingredients

  • 200g lentils
  • 60g rice
  • 6 garlic cloves
  • 2 onions, finely chopped
  • 1 ripe tomato, pureed
  • 2 bay leaves
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Prepare the Lentils
    Rinse the lentils thoroughly and place them in a pot. Cover with water and boil for 25–30 minutes, depending on how quickly they soften.
  2. Sauté the Aromatics and Rice
    In a pan, heat the olive oil over medium heat. Sauté the onion and garlic for 2–3 minutes, being careful not to burn the garlic. Add the rice and stir for another 2 minutes.
  3. Combine Ingredients
    Transfer the sautéed mixture to the pot with the lentils. Add the bay leaves, pureed tomato, salt, pepper, and enough water to achieve your preferred soup consistency.
  4. Cook the Soup
    Continue cooking over medium heat for 20–25 minutes, stirring occasionally to prevent sticking. Cook until the rice is tender and the flavors are well combined.
