Instructions
- Prepare the Vegetables:
Peel the potatoes, zucchinis, eggplants, and onions. Wash them thoroughly and cut everything into slices. - Combine in the Baking Dish:
Place all the sliced vegetables into a baking dish. Wash the tomatoes, blend them into a puree, and add to the dish. - Season and Mix:
Add the chopped parsley, minced garlic, salt, pepper, sweet paprika, water, and olive oil to the vegetables. Mix well to ensure all the ingredients are evenly distributed. - Bake:
Preheat the oven to 180-190°C (355-375°F). Bake the Briam for 45-50 minutes, depending on your oven.
Check occasionally, and if the dish looks dry, add hot water to maintain a rich, moist texture without stopping the cooking process. - Serve:
Once the vegetables are tender and slightly caramelized, remove from the oven and serve warm.
