Ingredients

  • 500 g okra
  • 2-3 medium potatoes
  • 4 ripe tomatoes
  • 1 bunch parsley, chopped
  • 1 medium onion, finely chopped
  • 5 tablespoons vinegar
  • Black pepper
  • Sweet paprika
  • Salt
  • Olive oil

Instructions

  1. Prepare the Okra:
    Clean the okra, wash them thoroughly, and place them in a colander to drain. Transfer to a bowl, pour over the vinegar, mix well, and let sit for 1 hour.
    After an hour, drain the okra but do not rinse off the vinegar.
  2. Prepare the Vegetables:
    Peel and wash the potatoes, tomatoes, and parsley. Slice the potatoes into medium-sized pieces and chop the parsley.
  3. Cook the Vegetables:
    Heat olive oil in a pot over medium heat and sauté the onion until soft. Add the potatoes and sauté for a few minutes.
    Then, add the okra, tomatoes, parsley, black pepper, sweet paprika, and salt.
  4. Simmer the Dish:
    Pour enough water into the pot to cover the ingredients. Cover the pot and let everything simmer over medium heat for 45-50 minutes, or until the sauce thickens and the vegetables are tender.
    If the dish looks dry while cooking, add more water as needed.
  5. Handle the Okra Carefully:
    Avoid stirring the okra with a spoon, as they may become mushy. Instead, gently shake the pot in a circular motion to prevent sticking.
  6. Serve:
    Once cooked, let the dish cool slightly and serve warm.
