- 1 kg green beans, cleaned
- 2-3 medium zucchinis, cut into chunks
- 4 ripe tomatoes, finely chopped
- 1 bunch parsley, finely chopped
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 red bell pepper, finely chopped
- Salt
- Pepper
- Sweet paprika

Instructions
- Sauté the Base
- In a large pot, heat olive oil over medium heat. Add the onion, garlic, and tomatoes, and sauté until the vegetables soften and the tomatoes release their juices.
- Add the Green Beans and Zucchini
- Add the green beans and zucchini to the pot, stirring well to coat them in the tomato mixture. Let them cook for about 5 minutes, allowing them to soften slightly.
- Combine Remaining Ingredients
- Add the red pepper, parsley, salt, pepper, and sweet paprika. Stir to mix the flavors.
- Simmer to Perfection
- Pour in enough water to just cover the ingredients. Lower the heat to a simmer, cover the pot, and cook for 55-60 minutes, or until the vegetables are tender. Add water as needed during cooking.
