Ingredients

  • 1 kg green beans, cleaned
  • 2-3 medium zucchinis, cut into chunks
  • 4 ripe tomatoes, finely chopped
  • 1 bunch parsley, finely chopped
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 red bell pepper, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Instructions

  1. Sauté the Base
    • In a large pot, heat olive oil over medium heat. Add the onion, garlic, and tomatoes, and sauté until the vegetables soften and the tomatoes release their juices.
  2. Add the Green Beans and Zucchini
    • Add the green beans and zucchini to the pot, stirring well to coat them in the tomato mixture. Let them cook for about 5 minutes, allowing them to soften slightly.
  3. Combine Remaining Ingredients
    • Add the red pepper, parsley, salt, pepper, and sweet paprika. Stir to mix the flavors.
  4. Simmer to Perfection
    • Pour in enough water to just cover the ingredients. Lower the heat to a simmer, cover the pot, and cook for 55-60 minutes, or until the vegetables are tender. Add water as needed during cooking.
