Ingredients

  • 1 large carrot, diced
  • 1/4 of a cabbage, finely chopped
  • 300g spinach, chopped
  • 1 onion, finely chopped
  • 2 spring onions, finely chopped
  • 1 small leek, finely chopped
  • 400g water
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. In a pot, heat the olive oil over medium heat. Sauté the onion, spring onions, and leek for 2-3 minutes until softened.
  2. Add the water, carrot, cabbage, salt, and pepper. Let the mixture boil for about 10 minutes.
  3. Lower the heat and continue simmering for approximately 20 minutes until the vegetables are tender.
  4. Add the spinach and cook for an additional 5-10 minutes.
  5. If you prefer a soup with more liquid, add a little extra water and adjust the seasoning to taste.
