Ingredients for the Cod

  • 1 piece of salt-cured cod
  • Olive oil
  • Flour

Ingredients for the Salad

  • 3 medium potatoes
  • 1 large carrot
  • 10 white mushrooms
  • 2 tomatoes
  • Feta cheese
  • Salt
  • Olive oil

Preparation for the Cod

  1. Cut the cod into pieces and place them in a bowl covered with water. If the pieces are large, they need 34-36 hours to desalinate; if they are smaller, they need less time.
  2. Change the water every 5-6 hours. Once the cod is ready, squeeze the pieces gently to remove excess water, and place them in a strainer.
  3. Heat olive oil in a frying pan. Dredge the cod pieces in flour and fry on both sides until golden.

Preparation for the Salad

  1. Peel the carrot and potatoes, wash them, and cut them into even pieces. Place them in a pot, add salt, cover with water, and boil over medium heat until tender, about 20-25 minutes.
  2. Meanwhile, heat a little olive oil in a pan and sauté the mushrooms, sliced, for about 4-5 minutes until their liquid evaporates.
  3. When the potatoes and carrots are cooked, remove them with a slotted spoon and place them in a salad bowl.
  4. Top with diced tomatoes, sautéed mushrooms, and crumbled feta, then drizzle with olive oil.
