Ingredients

  • 1 octopus
  • 2 kg small onions for stewing
  • 5 whole garlic cloves
  • 2 tablespoons tomato paste, diluted with a little water
  • Salt
  • Pepper
  • Sweet paprika
  • 2 bay leaves
  • 5 cloves
  • 1 cinnamon stick
  • 3 tablespoons vinegar
  • 50 ml water
  • Olive oil

Preparation for the Onions

  1. Peel and wash the onions, place them in a pot, and cover with water.
  2. Boil over medium heat for 15 minutes until they soften slightly.
  3. Drain the onions in a colander and set aside.

Preparation for the Octopus

  1. Cut the octopus into fairly large pieces, rinse them well, and drain in a colander.
  2. In a pot, heat the olive oil and lightly sauté the garlic and octopus.
  3. Add the diluted tomato paste, salt, pepper, paprika, bay leaves, cloves, cinnamon, vinegar, and water.
  4. Cover the pot and simmer everything together for 30 minutes to soften the octopus.
  5. After 30 minutes, add the onions to the pot and continue cooking for another 25-30 minutes until the ingredients are tender and the flavors have melded. Add a little extra water if needed for the sauce.
