Ingredients
- 10 prickly pears, peeled
- 800 g tsipouro (a Greek grape-distilled spirit)
- 1 cinnamon stick
- 500 g water
- 500 g sugar
Instructions
- Prepare the Fruit:
Carefully peel the prickly pears. Chop the flesh into small pieces and place them in a large glass jar. - Infuse the Spirit:
Add the cinnamon stick and pour in the tsipouro. Seal the jar tightly and let it sit in a cool, shady place for 10 days. - Strain the Mixture:
After 10 days, remove the cinnamon stick. Strain the infused spirit through a very fine sieve or a cheesecloth to remove any solids. - Make the Syrup:
In a small saucepan, combine the water and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool completely. - Combine and Bottle:
Once the syrup has cooled, add it to the strained spirit. Stir well to blend the flavors. Pour the liqueur into thoroughly sterilized bottles and seal.
